A dry Rose produced from Merlot and Viognier. Bright and fresh flavours of summer berries - strawberry, raspberry and blueberries. Fresh acidity gives the wine brightness and zest with an overlay of fresh, ripe red fruits. Drink now and over the summer months.
The Merlot (80%) and Viognier (20%) was handpicked and chilled overnight. The bunches were de-stemmed only (no crushing) direct to the pneumatic press for six hours and left to soak prior to pressing. The juice was clarified and lightly fined prior to a cool fermentation (140C) through to dryness. The wine was left on yeast lees with regular battonage to enhgance the mouthfeel and texture of the wine. The wine was then clarified, stabilised, lightly filtered and bottled early to retain freshness. Lightly fined with a vegetable protein - Vegan friendly.
