Intense aromas of red fruits - cherry and plum. Undertones of new French oak and a suggestion of licorice. A medium to full-bodied Pinot Noir that exhibits a fine tannin structure wonderfully integrated with the new oak. Flavours of plum, cherries and strawberry with a hint of warm spices and vanillin oak. A generous finish and persistence with the ability to age for five to eight years.

Description
The fruit was hand-picked and transported to the winery for open-top stainless steel fermentation with approximtely 30% whole bunch inclusion. Careful plunging was undertaken to ensure gentle extraction of colour, flavour and fine, elegant tannins. The wine was then pressed off and matured in 20% new and remaining in seasoned French oak for 10 months. Minimal fining and filtration prior to bottling.

“Expressive pinot from Denmark. It’s been made with an understated approach although 30% whole bunches have been included. Spicy plum and cherry on the nose with a little dried herbs. The medium-bodied palate is quite soft and supple. Yet there is structure and poise which has been influenced by the whole bunch inclusion.”
